Nob’s White 2023
“2023 was an exceptionally hot year. Since my vineyard is located in an area with mountain breezes, I was able to harvest grapes with high ripeness without losing too much acidity. Although the yield was low, I believe the grapes were of excellent quality.”

Lime-sulfur, Bordeaux mixture, collomite (JAS organic mite-killing agent), Robinhood (Fenpropathrin) only for trunk-boring insects unmitigated by physical remediation
The Delaware was direct pressed and fermented in stainless steel tanks with temperature control to prevent overheating. After fermentation was complete, frozen must was added before bottling to initiate secondary fermentation in the bottle. Perhaps due to the delicate wild yeast only the lightest petillance persisted with a touch of fleshy sweetness. Things didn’t go as planned, but Nobu-san is grateful for the delicate, honest representation of 2023.
