The base wine is from 2024 and as it was a very hot, dry summer Hase-san blended ripe Muscat Bailey A and Zweigelt from his own vineyard s with Chardonnay grown by his neighbor Yoshizawa, along with a small quantity of 2022/2023 Chardonnnay (M.V. stands for “multi-vintage”). Type: Dry, light-bodied, dark rosé or light red Varieties: 70% Chardonnay (Yoshizawa- contract farmed), 25% Muscat Bailey A, 4% Zweigelt, 1% Pinot Noir (domaine) Alcohol: 11.0% Wild yeast Sulfur: 20 ppm at bottling Production: 2,750 bottles Due to the multi-vintage, multi-varietal, multimodal composition of this cuvee, production notes won’t tell you much. A combination of shade-dried, barrel and stainless chardonnay from two years, stainless &amp; barrel-aged reds from two years, are blended deftly for a surprisingly intentional and refreshing light red.</image:caption>

      <image:title>Fukuihara Blanc 2023 - Fukuihara Blanc 2023 - In hot vintages there’s a concern that acidity will drop precipitously in the ripening grapes, leading to soft and uninteresting wines. Wanting a fresh and balanced wine, Hase elected to harvest the Chardonnay twice, early and late, and the Germanic varietals 2 weeks earlier than usual. Of this, 85% of the cuvee is 2023 and 15% is 2022. As always, Hase seeks a balance of lightness and depth. Type: light, dry aromatic white Varieties: 75% Chardonnay (Yoshizawa- contract farmed), 10% Riesling, 10% Kerner, 1.7% Gewürztraminer, 1.6% Pinot Gris, 1.6% Sauvignon Blanc (domaine) Alcohol: 11.5% Wild yeast Sulfur: 15 ppm at bottling Production: 1,900 bottles  Persistent pear and beeswax, textural, oily, with a touch of CO2, minerally lime and petrol. After ~24 hours, the color deepens and the beeswax, salty, gewurztraminer notes become more pronounced.</image:title>

      <image:title>Hikaru Farm Blanc Late Harvest - Hikaru Farm Blanc Late Harvest 2023 - The Hikaru Farm series originates in Hase-san’s very first wine, which was vinified at Arc-en-Vigne and embodied their whole selves. Today this series is released irregularly, has an experimental element, and is ever-changing, so it can be said to be “once in a lifetime” wines that reflect the evolving landscape of Fukuihara. The extreme heat delayed ripening and harvest by over 2 weeks, leading to high-acid but ultra-ripe grapes (25-27 brix) and low yields which were fermented slowly to create a singular white wine. Type: off-dry, concentrated white wine (13.5g residual sugar), golden in color Varieties: 35% Pinot Gris, 30% Riesling, 20% Gewurztraminer, 15% Sauvignon Blanc Alcohol: 14% Wild yeast Sulfur: 20 ppm at bottling Production: 650 bottles  Brown butter, hazelnuts, perfectly ripe sauteed peach and nectarine slices enlivened by vivid acidity. Nostalgic honey grahams with raisin, spice, and a salty miso-umami caramel. This wine will improve and evolves over 7+ days in the fridge. It is incredibly durable and concentrated.</image:title>

      <image:title>Hikaru Farm Rose de Clair - Hikaru Farm Rose de Clair - “In 2023, due to the record heat wave from July to September and almost no rain, the grapes were harvested at a degree of unusual ripeness. The red varieties in particular were well-rounded, resulting in a wine with a good balance of s ugar and acidity (21-22 brix). By blending the 2022 Chardonnay into this, which was itself fermented from sun-dried grapes, the overall thickness and complexity of the wine is enriched.” Type: very pale, delicately sparkling rose Varieties: 45% 2023 Cabernet Franc (Yoshizawa- contract farmed), 25% Muscat Bailey A (domaine), 30% 2022 Chardonnay (sundried, Yoshizawa- contract farmed) Alcohol: 11.5% Wild yeast Sulfur: 15 ppm at bottling Production:1,230 bottles  Cabernet Franc guides the palate in this very pale rose with umami-forward notes of mugwort, soil, and dried shiitake.       <image:title>Fukuihara Rouge pfZ - Fukuihara Rouge pfZ 2023 - Originally these grapes were going to be used for two wines: the pinot-dominant “Pinot Fan rouge” and Muscat Bailey A-dominant “Fukuihara rouge Z.” However, given the unusually warm year and dry October Muscat Bailey A achieved unprecedented ripeness, and the cuvees were combined into one wine. Hase label led this wine a “private reserve” to designate the special vintage. Type: Deep yet low ABV dry red finished in barrel Varieties: 55% Muscat Bailey A, 20% Pinot Noir, 15% Zweigelt, 10% Gamay Alcohol: 11.0% Wild yeast Sulfur: 15 ppm at bottling  Production: 1,480 bottles Grapes were carefully harvested and hand-sorted, 70% destemmed and cold-macerated prior to fermentation, 30% whole bunch fermented separately, prior to pressing. After pressing, fermentation continued in François Frères (80%) and Kadar (20%) barrels, then matured ~12 months before bottling. It drinks deep and velvety, but is as light and unencumbered as the 11% ABV suggests.</image:title>

Since the grapes didn’t reach full ripeness, I aimed for a gentle extraction to create a wine with a soft and delicate flavor.” Type: Red wine Variety: 100% Merlot Alcohol: 12.0% Wild yeast  Sulfur: 0ppm  Production: ~670 btl  Lime-sulfur, Bordeaux mixture, collomite (JAS organic mite-killing agent) The destemmed Merlot grapes were fermented in resin tanks with maceration for one week. Before the fermentation was fully complete, the juice was pressed and left to finish fermenting in liquid form. After fermentation, the wine was aged for ~8 months in barrels and stainless steel tanks before bottling.</image:title>

Although the yield was low, I believe the grapes were of excellent quality.” Type: very lightly sparkling white with a few grams of residual sugar Variety: 100% Delaware Alcohol: 12% Wild yeast Sulfur: 0 ppm Production: ~850 btl Lime-sulfur, Bordeaux mixture, collomite (JAS organic mite-killing agent), Robinhood (Fenpropathrin) only for trunk-boring insects unmitigated by physical remediation The Delaware was direct pressed and fermented in stainless steel tanks with temperature control to prevent overheating. After fermentation was complete, frozen must was added before bottling to initiate secondary fermentation in the bottle. Perhaps due to the delicate wild yeast only the lightest petillance persisted with a touch of fleshy sweetness. Things didn’t go as planned, but Nobu-san is grateful for the delicate, honest representation of 2023.</image:title>
